The Starter Box exists for one reason: to give someone who's never ordered from us before a real, honest first taste of what our beef actually is, without asking them to commit to a chest freezer full of it. It's the box we point people to when they ask "where do I even begin."
Why We Built It This Way
We didn't want a starter box that was just a smaller, watered-down version of our bigger boxes. Instead, we picked three things on purpose: a ribeye, because it's the steak most people already know and trust, a chuck roast, because it's the most forgiving cut to cook and shows what slow-cooked grass-fed beef can do, and four pounds of our standard 85/15 ground beef, because that's the cut you'll actually reach for most during a normal week. Between the three, you get a real cross-section of what raising cattle on pasture instead of grain actually changes about the meat.What You're Actually Getting
Everything in this box comes from the same herd, our own registered Scottish Highland cattle, raised 100% grass-fed and grass-finished on pasture here in St. Marys, Pennsylvania. Nothing in a starter box is a lesser cut or a different sourcing standard than what's in our bigger boxes. It's simply less volume, not less quality.A Realistic First Week
Most people who order this box start with the ribeye on a Friday or Saturday night, since it's the cut that needs the least explanation, salt, pepper, a hot pan or grill, and you're done. The ground beef tends to get used two or three times over the following week, tacos, a pasta sauce, maybe a batch of burgers. The chuck roast usually goes into the slow cooker on a Sunday, since it needs the least attention of anything in the box, just season it, walk away, and come back to dinner. That spread is intentional. By the time you've worked through all three, you've actually experienced grass-fed beef across a hot-and-fast cook, an everyday cut, and a low-and-slow roast, which gives you a real sense of how this beef behaves before you decide whether to go bigger.Why Grass-Fed Behaves Differently
If this is your first time cooking grass-fed beef, there's one thing worth knowing going in: it cooks faster than what you might be used to, because it carries less fat than grain-fed beef. A ribeye that would take six minutes a side on a grain-fed cut might only need four or five here. A meat thermometer is the easiest way to avoid overshooting your target the first few times, rather than relying on cook time alone.Storage and Planning
Everything ships flash-frozen and vacuum sealed, so there's no rush to cook it all in one sitting. Move whatever you're not using within a few days into the back of your freezer, it'll hold well for months.
