Why These Five Specifically
We picked cuts that actually behave differently on the grill, not just cuts with different names. Ribeye brings the marbling and richness most people picture when they think steak. NY Strip is firmer and leaner, a workhorse cut that holds up well to a hot, direct sear. Sirloin is lean and budget-friendly without sacrificing real flavor. Flank and skirt are both thinner, benefit from a marinade, and reward a hot, fast cook and a careful slice against the grain. Grass-fed beef cooks faster than grain-fed beef because it carries less fat overall, and that shows up most directly on a grill, where high heat can overshoot your target temperature in a hurry. A steak that might take six or seven minutes a side over grain-fed timing could be done in four or five here. This is the single most common mistake we hear about from people new to grass-fed steak, not a flaw in the beef, just a difference in timing that a thermometer solves immediately.Working Through the Box
A natural order to work through these, if you want to notice the differences, starts with the ribeye or NY strip first, since those are the closest to what most people already know, then move to sirloin to notice the leaner texture, and finish with flank and skirt, which need a different approach entirely, marinade time and a hot, fast cook, sliced thin against the grain.
