Our herd of Scottish Highland cattle graze on rotating pastures throughout the growing season, moving to fresh grass regularly so the land has time to recover and the cattle always have access to nutrient-rich forage. In winter, they're fed high-quality hay cut from our own fields — no grain supplementation, no feedlot time, ever.

When the time comes for processing, we work with a USDA-inspected facility to ensure every cut meets strict quality and safety standards. After processing, cuts are vacuum-sealed and flash-frozen within hours to preserve peak flavor and nutrition.
