A cow share is a different way of buying beef entirely. Instead of choosing individual cuts, you're reserving a portion of one actual animal, a quarter or a half, and it gets broken down into a full mix of steaks, roasts, ground beef, and more, based on a cut sheet you help decide. It's the lowest cost per pound of anything we sell, and it's how a lot of families who cook beef often end up buying long-term.
How a Cow Share Actually Works
When you reserve a share, you're not buying from beef we already have cut and packaged, you're reserving a portion of a specific animal before or shortly after processing. A quarter share is roughly a quarter of the animal's total usable weight, typically 90 to 110 pounds depending on the individual animal, and a half share is double that. Because Scottish Highland cattle run smaller and leaner than commercial breeds, our shares tend to land toward the lower end of typical weight ranges you might see quoted for larger breeds, worth knowing if you're comparing us to a bigger commercial operation.Why This Is the Best Value

Before your share is processed, you'll work with us on a cut sheet, essentially a list of preferences for how your portion gets broken down. Want more ground beef and fewer roasts? More steaks and less organ meat? This is where you decide. If you don't have strong preferences, we default to a balanced mix that reflects how most families actually cook, similar to the ratio we use in our Family Box, roughly weighted toward ground beef and steaks, with roasts and a smaller amount of organ meat rounding things out.What You'll Actually Receive
A typical share includes a full range: multiple steak cuts, several roasts, a large portion of ground beef, and a smaller amount of organ meat unless you opt out of that. Nothing is wasted or set aside, a share reflects the real proportions of the animal, which naturally means more ground beef and roasts than steaks, since that's simply how a cow is built. If you're expecting mostly steak, a share isn't the right fit, an individual box or specific cuts would serve you better.Freezer Space and Planning
A quarter share reasonably fits in a standard chest freezer alongside other groceries.
